Relief for Constipation in Pregnancy
One of the changes that occur during many pregnancies is constipation
much to the chagrin of young mothers-to-be. They should make sure that they are drinking 8 8oz. glasses of water daily and getting their daily exercise. This is very important not only to relieve their constipation, but to be in good shape for labor and delivery. Prunes and or prune juice is a great help but if you do not care for prunes the following is a delicious bran muffin recipe which is high in fiber and low in fat.
Bran Muffin Recipe
1 c. of raisins (light or dark) ½ t. salt
1 ¼ c. of all-purpose flour 1 c. bran cereal (not flakes)
1 T. of baking powder 1 c. of 2% milk
1/3 c. of sugar 1 egg, lightly beaten
1 1/4 t. cinnamon ¼ c. vegetable oil
Preheat your oven to 400°. Lightly grease or insert paper cups into a 12 muffin baking pan. Combine the raisins with 2 T. flour in a small mixing bowl and toss to fully coat the raisins. Combine the rest of the flour, baking powder, sugar, cinnamon and salt in a medium sized bowl stirring until well blended. In a large bowl combine the milk and the bran cereal and let stand for 2 minutes. Add the slightly beaten egg and oil and stir until the bran mixture is well blended. Add the dry ingredients to the bran mixture and stir lightly with a fork until the dry ingredients are just moistened. Fold the raisins into the batter. Spoon the batter into the muffin cups filling about 2/3 full. Bake the muffins until golden brown; about 18-20 minutes. Cool the pan on a wire rack for about 5 minutes. Using a knife (plastic one if using a Teflon pan), loosen the edges of each muffin from the sides of the cup if needed and turn the pan over to release the muffins. Enjoy with your breakfast.
